Hearty Beef & Broccoli

Prep time:

Cook time:

  • 2 lbs any Ranch Wives steak, cut against the grain into 1/3 inch strips
  • 1/2 cup Beef Stock
  • 2 TBS minced garlic
  • 4 cups broccoli florets
  • 2 cups fresh spinach (optional)
  • Cooking Oil
  • Corn Starch (2 tsp for sauce and more for coating steak strips)
  • 1/2 cup low sodium soy sauce
  • 2 TBS brown sugar

  1. Toss steak strips in a dusting of corn starch
  2. Heat cooking oil in a deep frying pan or wok. Brown steak strips in batches and set aside
  3. Cook garlic in the pan until fragrant (about one minute), then add broccoli and beef broth. Then when no one is looking toss in the spinach. Let simmer until broccoli starts to get tender. About 10 minutes
  4. Meanwhile, make the sauce by whisking the soy sauce, 2 tps corn starch and brown sugar in a small bowl
  5. Once broccoli is tender, add reserved steak strips and soy sauce mixture to the pan. Stir and let simmer for another 8-10 minutes or until sauce has thickened slightly
  6. Serve with rice or soba noodles
