Pasta e Fagioli

Gather a group for the large batch of hearty and filling soup. Great for Sunday dinners with the family.

Ingredients:
  • 1 lb Ranch Wives ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 stalk celery, chopped
  • 2 large carrots, chopped
  • 2 (14.5oz) cans petite diced tomatoes
  • 1 (15oz) can Great Northern beans (with liquid)
  • 1 (15oz) can red kidney beans (with liquid)
  • 1 (15oz) can tomato sauce
  • 1 TBS white vinegar
  • 1 tsp oregano
  • 1 tso basil
  • 1&1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp thyme
  • 1/2 lb ditali pasta

Instructions:
  1. In a large Dutch oven or soup pot, brown ground beef
  2. Add onion, carrot, celery & garlic. Sauté for about 10-12 minutes or until vegetables are tender
  3. Add remaining ingredients (except pasta) and simmer for one hour –stir occasionally
  4. With 10-15 minutes remaining –separately cook the pasta until al dente, drain & add to soup (you could try just adding to the soup and cooking until done)
  5. Simmer for 5 additional minutes and then serve with freshly grated parmesan cheese
